Based on high-quality fresh produce purchased weekly by us at the market, the cuisine we offer is original and inventive. It is brought up to date and in tune with the seasons by Guillaume Lamory, a daring and talented chef who earned his stripes in prestigious establishments before founding La Fabrique in Brie-Comte-Robert, the town of his heart where he grew up. Every week, chef Guillaume Lamory visits the Rungis market to find the finest produce, starting with the seafood section and then the Ile-de-France producers' market, which he considers a guarantee of quality, freshness, and respect for seasonality. It is also a way of favoring short supply chains by sourcing as locally as possible.

Together with executive chef Aloïs Doukhan, they are committed to offering you bold cuisine that will delight your taste buds. A partner of Vietnamese origin and a mother of Italian origin inspire chef Aloïs to create recipes with flavors from around the world!
